Bolo do Caco (round flat loaf typical of Madeira)

 

Ingredients:

 

1 kg (35.27 ounces) flour

1 kg (35.27 ounces) sweet potato

25 g (0.88 ounces) baker’s yeast

Water, to taste

Preparation

 

Boil the potato and mix it with the remaining ingredients. Let it ferment. After mixing, divide the dough into cakes and stretch them out. Leave them to ferment for another 45 minutes. Bake on a very hot stone. Be careful for the cake not to burn. Brown it on the sides or edges, since the cake (bread) bakes on top and underneath, on a hot iron plate.  As it is stated in Ilhas de Zargo: “Bolo do Caco is a Hebraic bread, baked over ashes”. It is very popular in madeiran country festivals.
